Ingredients:
2½ cups carrots, finely shredded 600 ml 2 cups cooked rice 480 ml 2 eggs, beaten 1 (8 ounce) cubed processed cheese 227 g 1 (15 ounce) can cream-style corn 425 g ¼ cup half-and-half cream 60 ml 2 tablespoons (¼ stick) butter, melted 30 ml 2 tablespoons dried minced onion 30 ml

Instructions:
Combine all ingredients and ½ teaspoon (2 ml) each of salt and pepper in large bowl.
Spoon into buttered 3-quart (3 L) baking dish.
Bake uncovered at 350º (176 C) for 40 minutes or until set. |
