Ingredients:
Cake Mix:
1 (18 ounce) lemon cake mix 510g
1 (3.4 ounce) package vanilla flavor instant pudding 100g
1 (8 ounce) can pineapple, crushed, drained 227g
1 cup 7-up 240ml
? cup vegetable oil 160ml
4 eggs
Coconut Pineapple Frosting:
½ cup (1 stick) butter 120ml
1½ cups sugar 360ml
1 (8 ounce) can pineapple, crushed with juice 227g
2 tablespoons flour 30ml
2 eggs, slightly beaten
1 cup coconut 240ml |
Instructions:
Preheat oven to 350º (176º C). In large bowl, combine cake mix, pudding mix, pineapple, 7-up, oil and eggs. Beat on low speed to blend, then beat on medium for 3 minutes.
Pour into greased and floured 9 x 13-inch (23 x 33 cm) baking pan. Bake for 30 to 35 minutes or until cake tester comes out clean. Cool and frost with Coconut Pineapple Frosting.
In medium saucepan, cook butter, sugar, pineapple and juice, flour and eggs over low-medium heat until thickened.
Remove from heat; stir in coconut, and mix well. Spread over cake while still warm. |
