Ingredients:
Ingredients for Jar: 2 cups flour 480ml 1 tablespoon baking powder 15ml ½ teaspoon salt ½ cup sugar 120ml 1 cup sweetened, shredded coconut 240ml ¾ cup chopped macadamia nuts or almonds 180ml
Instructions for Jar:
Combine flour, baking powder and salt. Spoon into bottom of 1-quart (1 L) jar.
Spoon sugar over flour mixture.
Layer coconut over sugar and top with macadamia nuts.
Place lid on jar, close and attach baking instructions.

Instructions:
1 egg, slightly beaten ¼ cup (½ stick) butter, melted 60ml 1 (8 ounce) can crushed pineapple with juice 227g
Preheat oven to 350° (176° C).
Empty contents of jar into large bowl and stir to mix.
In separate bowl, whisk egg, butter and pineapple with juice and blend well
Add liquid mixture to dry mixture and stir just until mixture is moist.
Spoon batter into 12 prepared muffin cups.
Bake for 25 to 30 minutes or until tester comes out clean. |
