Ingredients:
12 red or new potatoes (baking potatoes can be substituted) 2 cups sharp cheddar cheese, grated 480ml 6 strips cooked bacon, crumbled ¼ cup (½ stick) butter, melted 60ml |
Instructions:
Boil potatoes, with skins on, until done. Drain and let cool. Thinly slice the unpeeled potatoes. Butter bottom of 9 x 13-inch (23 x 33 cm) baking dish. Pour one layer of potatoes, salt and pepper to taste, half of cheese and bacon in casserole. Dribble half of butter over layer. Make another layer the same way. Bake uncovered at 350º (176º C) until bubbly hot, about 25 minutes. This potato recipe is guaranteed to please! Freezes well. Serves 8. |
