Sweet Potato Casserole |

Ingredients:
1 (29 ounce) can sweet potatoes, drained 805 g ⅓ cup evaporated milk 80 ml ¾ cup sugar 180 ml 2 eggs, beaten ¼ cup (1/2 stick) butter, melted 60 ml 1 teaspoon vanilla 5 ml
Topping: 1 cup packed light brown sugar 240 ml ⅓ cup butter, melted 80 ml ½ cup flour 120 ml 1 cup chopped pecans 240 ml

Instructions:
Preheat oven to 350° (176° C).
Place sweet potatoes in mixing bowl and mash slightly with fork.
Add evaporated milk, sugar, eggs, butter and vanilla and mix well.
Pour into greased 7 x 11-inch (18 x 28 cm) baking dish.
Mix topping ingredients and sprinkle over top of casserole.
Bake, uncovered, for 35 minutes or until crusty on top.
Serves 8. |
