Ingredients:
1 pound or more to taste of Longhorn beef or venison .5kg 1 large onion, coarsely diced 1 (16 ounce) can whole kernel corn, drained .5kg 1 (16 ounce) can ranch-style beans .5kg 1 (16 ounce) can chile style stewed tomatoes or chunky Mexican salsa hot or mild .5kg 1 pound cheddar cheese, grated .5kg 1 jalapeno pepper diced fine (optional) |
Instructions:
Brown beef and onions and drain. Add corn, beans and tomatoes or salsa. Simmer until stew thickens. Then incorporate cheese. Serve over cornbread or flour tortillas. (Add more corn and beans if you need to stretch stew.)
TIP: Leftovers are good in an omelet.
