Bake Quail in Rice |

Ingredients:
4 quail, dressed and ready for baking 4 tablespoons butter 60ml 1 cup grated carrot 240 ml ½ cup chopped green onion 120ml ¼ cup finely chopped parsley 60ml 1 cup uncooked wild rice 240ml 2½ cups chicken broth 600ml ½ cup white wine 120ml ½ teaspoon seasoning salt 2ml 2 slices bacon, cut in 4 pieces |
Instructions:
In deep skillet, brown birds in butter. Remove birds and set aside. In same pan, saute carrot, onion and parsley until limp. Add rice, chicken broth, wine and salt; stir well. Place quail on top of rice and lay bacon strip atop each quail. Cover and cook over low heat for 30 minutes or until quail are tender. Sprinkle with additional salt. |
